polpette di melanzane

Buon giorno! It seems everywhere I've been this past week people have been talking about polpette di melanzane. So, yesterday I decided to give them a try. Delicious!
And yes, they are so simple to make.

Polpette di Melanzane

1 large eggplant, cubed
garlic
stale bread, softened in water
bread crumbs
Parmesan cheese, grated
1 egg
fresh parsley
basil
salt

Boil cubed eggplant until soft. Drain and cool.
Mix ingredients together in a bowl. Form into little balls and roll in bread crumbs. Place on baking sheet. Drizzle with oil. Bake, turning once. Bake until golden brown. Enjoy.

There are many variations you can do with these. Rita sometimes adds ground beef. I added a bit of chili pepper.
